Cocktail Time with Fire in the Hole

As the leaves begin to crunch on the sidewalks the seasonal cocktail calendar opens up a brand new section of delightful libations that celebrate the flavors profiles of Fall. From our friends at The Waiting Room in Portland, comes a tasty treat that evokes the feeling of heavy blankets wrapping around you while you cuddle up next to the fire. Ok, maybe that might be going a little far, but it’s still damn tasty and pairs perfectly with sweatpants and a marathon of Harry Potter.

Fire in the Hole

0.5 oz Wray & Nephew Overproof Rum

0.5 oz Averna

1 oz Laird’s Apple Brandy

0.25 1:1 Simple Syrup

Dry Cider

Bittermen’s Hellfire Habanero Shrub

Whole cloves

Place cloves in a julep strainer and set double old fashioned glass over it. Through the holes in the strainer, take a lighter to the clove until the smoke coats the inside of the glass. Combine all ingredients in mixing glass except for dry cider. Stir with ice then strain into smoked glass top with cider and add a large cube and enjoy.

“What evokes a chilly fall night more than the smell of baking spice and crisp apple? I tried to capture those elements in this cocktail without it being cloying. The heat from the shrub and the overproof rum tie everything together and wrap around the other ingredients like an old favorite blanket.” – Chazz Madrigal, Bar Manager
