Cocktail Time: The Fair Game

Our friends over at Radar are kicking out some delicious signature cocktails and as one of Portland’s best bars, we expect nothing less. If you can’t head on over to watch the magic happen and taste the skill of their expert mixologists, lucky for you we stole the recipe for their out-of-the-box Fair Game. (When we say “stole” we mean we tasted it, asked for the recipe, and they gave it to us. Just don’t ruin our street cred.)

What You’ll Need:

1.5 oz Lustau Los Arcos Amontillado Sherry

1 oz Appleton’s VX Rum

0.75 oz Lime Juice

0.5 oz Simple Syrup

1 Barspoon Orange Marmalade (we recommend Wilkins & Sons Tiptree “Old Times”)

What to do:

Using a cocktail spoon whip together all ingredients, dump into an empty tall Collins glass, fill glass 3/4 full with crushed ice, swizzle contents (boi lele swizzle stick recommended), top with more crushed ice for a full rounded mound. Gently express mint sprig and tuck into the top of ice mound.

“The Fair Game is a great cocktail to kick off fall, with its warming rum and rich nuttiness from the sherry. The bright orange and mint let you hold on to a tiny bit of summer.” – Lily Tollefsen, Owner and Bar Manager
